There is not one thing wrong with this recipe. I could eat it all day, over and over again. Tomato, mozzarella, and basil is one of my favorite food combinations in general, but when they tomatoes are roasted they such a deep tomato flavor and a wonderful sweetness. The only thing I might modify is maybe to add a bit more balsamic. It gets so syrupy and delicious that I just want more of it! I will be making this many times in the future. Thanks for a great recipe Ina! :

Dont make unless you love tomatoes with the intensity of sun dried tomatoes covered in balsamic vinegar. I personally love strong flavors but even for me this was a little over the top. Luckily I had mini mozz balls so I could have a piece with each tomato...

I will never eat a "raw" caprese salad again unless the tomatoes are in-season and freshly picked. This is simply amazing. Don't miss out. Make it now! I looooove this!!!!

I really like this recipe. I did a double batch on my first time and prepared too much liquid. But the kids and the wife really enjoyed it. I put the cheese on and then put it back in oven for 5 minutes to let the cheese melt.

And be generous with the garlic!!

Fabulous! I have gone back to this recipe many times. Great appetizer to bring to someones house. Perfect for the fall and winter months. I have been making it for years and it is always a hit! Once I brought it to a Vineyard! It goes great with red wine! Serve right out of the oven or at room temperature with warm Italian bread sliced thin. YUM!

Absolutely perfect way to use roma tomatoes. Only suggestion is you hold off on some of the salt - perhaps by 1/2. When you add some oil and balsamic to dress, there is enough extra salt to bring it to life. Otherwise, first batch was too salty for me. But delicious nonetheless.

The beauty of this recipe is you don't have to use tomatoes in season! I've made it in winter and it really wakes up those dull tomatoes! Delicious.
