OOOh! Someone gave me a bottle of blackberry currant balsalmic vinegar and I added some honey to sub for the sugar. Awesome! I also am adding this to sandwiches, cassaroles, bake mac and cheese. I will freeze a batch and see how that works out. Not sure because of the moisture content. Can't have enough of this!

Wasn't too hard to make and tasted good at first, but the more I ate it the worse I felt - the taste simply got to be overwhelming, was too strong overall, and honestly made me want to throw up. I threw the whole salad out.

Terrific salad. I have done this several times now when I can not get really good tomatoes and it turns out so good. It is a great dish to have when guests arrive. This dish, some slices of toated bread and a glass of wine.

So good! And you can even use the tomatoes on a sandwich for lunch the next day and they really add that extra flavor.

I made this dish 3 days ago and followed the recipe precisely....IT WAS OUTSTANDING! I had to make it again yesterday because we ate all of the first batch and I tried it using some of the tips from another rating--no sugar and just a little less vinegar. I thought this version lacked flavor a bit.

Made this with about half the amount of olive oil and no sugar and as soon as my family had a taste it was gone! It was probably one of my favorite versions of caprese, and I have tried many variations, all over the world! I urge you to try this, even if you aren't a big fan of tomatoes!

This is AWESOME! I doubled the amount... will have it again tomorrow. I don't have a garden full of tomatoes, so I have to wait until Saturday for the local farmers maket to buy more tomatoes. I don't know if I can wait that long.
