    Eggplant and Avocados are not something we usually have. So I didn't know how this recipe would go over. But, everyone loves it and wanted seconds and thirds. We will definitely be making this again. I was a bit worried about it being bland so I added a 1/4 cup of brush-eta mix from the grocery store and I will add that into the recipe.

    My cousin and her family are supposed to come visit and her husband is Greek. I wanted to try this to have something special to fix when they come to visit and this is definitely on the menu! It's also lighter on the bread with using the pita which is a plus. My family loved this too.

    i'm not a huge fan of eggplant, but after eating this i'm a convert. there were people at the table who don't like eggplants that ate this too. my friends and i made this the other night. it was so yummy that i just wanted to grab the whole bowl for myself. its was really fun to make, especially with so many hands to do the chopping. it was such a hit!

    This was pretty good, and I liked the different take on the typical bruschetta - made it more substantial. I'm not sure why, but there was a slightly strong, bitter taste that kept me from giving it 5 stars. Maybe I needed more salt. It was hard to eat on homemade pita chips...mine were too soft to hold the bulky ingredients of the bruschetta.

    I made this bruschetta today and it was awesome. I didn't put in the avocado because i'm not crazy over them. The chips were great with the feta cheese. The flavors were outstanding. I also made the herb yogurt chicken. That was scrumptious too. Love your show, Big Daddy!!!

    OHH MY!!!!!!!
    I had feta sitting in the refrigerator, but tired of eating it "as is".
    Now I saw the recipe on TV & tried it.

    WOWWWWW!!!!!

    Loving all of the ingredients in this recipe, I decided to try Big Daddy's method. This recipe is awesome, delicious, yummy, all that and some more! Thanx Aaron for yet another great dish.....I'm still watching and cooking!

    The flavors in this dish really come together for a unique appetizer. Be sure to cut the tomatoes pretty small and uniform. And try to keep the eggplant slices the same thickness so they cook evenly. I think next time I make this, I'm going to add some garlic to the mix. Definitely go out and find the Mediterranean flat bread instead of the usual pita chips--it makes a world of difference!

    Big Daddy, you make me LOVE eggplant! this is a hearty but not heavy sandwich, I make it every week for my 9 year old--he loves it!
