The pie is delicious although I should have taken to heart the review that said to be sure to cook the filling longer. I haven't made a cooked filling with eggs for a long time and I was freaked out about not tempering the egg yolks prior to adding them to the simmering mixture. So my filling is a bit loose but I am using that as an excuse to "clean up" the pie plate so it doesn't look so messy! Like I said - Delicious! I will certainly try it again.

great pie! I used a different crust recipe, just because I've been making the crust for years, and I knew it worked well with every pie. I have kids, so I didn't use the limoncello and just used a little more lemon juice. the first time I made it, the meringue didn't turn out despite me using a clean bowl and mixer, and not having any yolk in the whites. the second time I made it, it still took a while to beat the meringue, but not quite as long. remember if you're using the oven to brown the top, keep a close eye on it. I put it in for 3min, and the top was still burnt, I had to scrape it off and do it again.

Lemon Meringue Pie is my absolute favorite so I have had many. This is by far the absolute best Lemon Meringue Pie I have ever had. Never liked pie crust and would normally not eat it and this pie crust is extremely delicious and flaky. I made this for family get together (had to make 2 and by the end of dessert there wasn't one piece left.
My husband normally doesn't care much for Lemon Meringue pie but this one he loved and asked me to make another one immediately. I'm going to try and make this into an Orange Meringue pie for him too and also a lime one.
I thought there was a mistake with the meringue recipe with the confectioners sugar as ingredient rather than granulated sugar. I looked at every other recipe for meringue I could find and not one has confectioners sugar as ingredient.
I used the confectioners sugar & will never again use granulated sugar in a meringue.
Thank you so much Emeril! You are the best!

I made this again after 1.5 yrs... excellent pie. However, this time filling did not set as well. I don't recall the initial mixture turning clear, only whitish, maybe my heat was too high and I did not simmer long enough? OR my cornstarch is too old? but I thought eggs are what set things. I do know this: read this recipe several times before starting it and have everything premeasured at hand, ready to add. Its very poorly organized, I copied it and separated the crust , filling and meringue, much easier to follow. I also don't use the limoncello, so used 1T zest and 1 lemon juice extra. Flavor is great. And my broiler is near the floor and not high, so I literally sit low watching and rotate the pie 3x to evenly brown the meringue.

I made this yesterday and it was Very good. I didn't have limoncello so I added the juice of 1 extra lemon instead. The filling turned out light and very flavorful. Unfortunately I burned the meringue when I used the broiler. I'd recommend putting it on the second to top rack rather than the top rack an then watching it like a hawk. Thankfully I was able to scrape the burnt meringue off (I put a very thick layer on and re-broil it properly.

I have made this pie of Emeril's for Christmas Eve every year for the past 6 years. My family loves it. It is not too sugary. It is the perfect combination of sweet and tart. Use Meyer Lemons.

I was nervous to make this pie, but it turned out to be much easier than I expected! My whole family loved it. I definitely recommend measuring all the ingredients first and keeping them close to the stove before you start making the lemon filling. I used a graham cracker crust and it was delicious. I also didn't have any limoncello, so I just used the juice from one extra lemon and added it to the 2/3 cup of lemon juice. Will definitely make this recipe again!

often I find lemon meringue pie to sweet, but this one was perfect. I did use my own pie shell and meringue recipes though. I will definitely be making this again.

I've made this pie several times and it was excellent each time. I follow the recipe exactly for both the filling and the crust. I received many compliments on it each time.

This was my first attempt at a lemon meringue pie and it came out perfect. I followed the recipe exactly and it was to die for. The lemon custard is insanely good!! Will I be making it again? Let's just say I now have a blow torch:
