Growing up I had a recipe called cowboy cookies that over the years had gotten lost in a move...I missed the recipe(as did my friends and family...finally by chance I searched the title and found this...same ingredients different portions(I grind the oatmeal as part of the flour mix in the original but they are perfect as is...slight crisp to the outside and chewy inside....I have used white chocolate and macadamias instead(sometimes with dried cranberries...different sweetnesses of chocolate and different nuts... just follow the basics and THERE ISN'T A BETTER COOKIE OUT THERE!

This is a wonderful recipe! I bake cookies all of the time, and this is the best oatmeal recipe I have found. Great consistency and great flavor! I used a cup of toasted pecans and a cup of toffee pieces instead of chocolate chips, and yum! If you like thick, chewy cookies, this is the best recipe you will find.

Great cookie! The pecans and coconut made them seem so fancy conpared to regular oatmeal chocolate chip. And the kids loved them! Using a cookie scoop the recipe made 5 dozen - a great size for portion control - otherwise the whole batch is gone before you know it!

I made these cookies for a cookie exchange party I hosted, and they were a hit! Absolutely delicious. The coconut and pecans are a great combination with the chocolate
