Very disappointed. I had just made Bobby Flays Greek Orzo with shrimp and hoped this would be another stand out salad after reading the reviews, but the best thing I can say is it is crunchy. It made way too much and was really watery the next day and not very appetizing. Not worth the work. I had read many reviews and was really hopeful. I don't get it.

Okay. I don't know what you are all raving about. True, it's a nice change from a regular salad but it took a LOT of extra ingredients to make this salad edible. Think twice before you start making it. It's simple but NOT cheap. TG I read the reviews for add-ons - I used most of them in addition to a small jar of marinated chopped artichokes (w/marinade, black olive tapenade, Greek dressing, several additional seasonings and vinegars. Also will try pearl couscous if I try it again. I think it will help the overall texture for it to be larger. Or maybe use a different grain or small pasta. Thought I was going to have to trash the whole batch but after chilling 12 hours it's "okay". I'm making my way through it slowly but no one else at my house will eat this, so… Tonight I'm going to try what one reviewer suggested and stuff it in some veggies, top w/cheese and bake. See if we can finish it off that way. Very disappointed overall but it wasn't a complete loss.

Definitely a winner! All the flavors compliment each other and it's really easy to make, I like to chill my salad prior to serving.

SO GOOD! Started a no refined sugar diet and was going to a church pot luck. I knew I needed to make something healthy that I could eat. Oh my goodness!!! Loved it and it got rave reviews! It was so good I made another batch this morning to take to work for lunches. I also bought the small sweet bell peppers that I stuff the salad in...super tasty! Thanks!

This is a WINNER. Full of healthy ingredients and fantastic flavor. After trying it once with parmesan couscous, I switched to plain and just made sure I seasoned it well with salt, celery salt and black pepper. The parsley is a perfect finishing touch. The feta is fabulous. I used a yellow pepper (sweet. Also, I used 7 limes because I like the flavor better. My family loves this salad.

I love this recipe and so does everyone else that has tried it. It's great for a pot luck lunch. It tasted even better the next day.
