Love this salad! Inexpensive & easy to make. It keeps well in the fridge, & tastes just as good the next day. I plan on making it often!

This was a big hit at my Labor Day party! Everyone loved it. Great flavor, light and healthy. My only complaint is the couscous got kind of clumpy, but no one seemed to mind it at all - they devoured it! Thanks!

This is a fast & fresh salad. I made it last night to take for lunch the next day but we ate half of it before I could get it put away.... Thanks Tracie... & Paula

Excellent summer salad! Highly recommend! I made this recipe using the parmesan-flavored couscous. It was absolutely delicious! I served it to my book club & everyone kept going back for seconds. Lots of chopping but totally worth it. I will keep this recipe in my culinary quiver!

This is hands down one of our favorite recipes. We use this as a lunch or light dinner in our house and it's a great go-to when we're tired. I use plain couscous and add 1/2 tbsp garlic powder and 1/2 tbsp oregano with salt & pepper during the couscous prep and it turns out amazing. This also tastes great cold as a leftover lunch!

I'm always looking for easy sides to make for BBQ's and potlucks that will appeal to a lot of people. This is perfect for that.I used cilantro instead. It was very easy and quick to make, and it could sit out all night without fear it would spoil, in fact it gets better the longer it sits. We are finishing up the leftovers today and it tastes even better. Will definitely become one of my go-to side dishes!

This salad was awesome. I used 2 cups plain couscous and grated fresh parmesan over it while it was still hot. I will make this over and over again.
    Thanks Paula.

Weird. my name is Tracy and I have made this type of salad for several years all summer long. It's easy, delicious and makes a great side for a cookout or alone for a cool lunch. My recipe differs in that I use a little chicken base in the water for the cous cous. Also, I use the chickpeas, but also add a rinsed can of black beans, a pinch of garlic powder, and a dash of hot sauce to the dressing when mixing it up. Yum!
