    This was a HUGE hit at my mother's day dinner. Everyone loved it! Perfect for warm weather BBQ.

    I'm always trying to get my kids to eat salad, but they are not fond of lettuce of any sort. This recipe gets some really great, good for the body, fresh veggies in a salad that my kids will eat. They even ate seconds.

    Simple and delicious. The faster you can dice the vegetable, the easier it is. Next time, I will also through in diced avocado.

    I used bottled lime juice (2 tablespoons and just eyeballed the olive oil it worked out really well for me.

    I LOOOVE this recipe!! Perfect summer side dish!! I served this with come grilled kielbasa and Ina's vinaigrette broccolini and it was a BIG hit.
    Only changes, I used the tri-color couscous since that's what I had on hand, using 2 cups dry, didn't measure it once it was cooked. Added tons of color. Also, I'm preggo and have a thing against limes right now, so I used one lime and doubled the olive oil and it tasted wonderful, didn't miss the lime taste at all!
    Warning though, I made this for just me and my hubby and it made WAAAY too much for us. We had healthy servings and I barely put a dent in the bowl haha no need to worry about going hungry with this recipe!

    Made this for a Bachelorette Beach Party Weekend. Nine beautiful health minded bridesmaids and a beautiful bride to be. Every single one of them raved about it. The possibilities with the recipe are endless: Add shrimp or chicken for a light summer main dish salad. Thank you Tracie and Paula...this is such a keeper!

    PS...the wedding was beautiful, as well!

    I made this last night to pair with grilled pork tenderloin and it was delish. My guests asked for the recipe. I used parmesan cous cous and followed the recipe and it came out perfect.

    i made this yesterday and it is GONE! such a wonderful, light, summer salad!! i took a suggestion from another reviewer and added 1/3cup of greek dressing for extra flavor and it was fantastic!! i will be making this alot this summer! =
