    My sister made this one night while I was making Spaghetti alla Ceci, and while the spaghetti recipe was quick, easy and delicious, this one (while yummy was much more labor-intensive than it appeared on TV. It WAS delicious, though!

    This is a keeper -- it is so easy, so good for you, and so easy to adapt for a single person. For one serving (for a gal I used 1 chicken breast (about 4oz -- I buy them frozen, prepackaged in single servings, and don't have to thaw before cooking, about 1 tbs EVOO (divided, about 3/4 tbs butter, 1 large clove garlic (I really like garlic, about 3 tbs dry white wine, about 1 tbsp capers, juice of 1/2 lemon (very tart, and 1/2 of a 12 oz bag of baby spinach (after it was OK to buy bagged spinach again. I will have this dish often!

    This recipe is so easy and delicious. My family loved it and they don't even like spinach. The flavors blend so nicely and there is not a strong spinach aftertaste.

    mates, this dish is good and good for you. Using baby spinach eleminates a lot of work, and its ready in a snap. even an old salt like me can fix it. So fair seas and good sailing.

    Wasn't fabulous, but okay. Was nice to have the warm salad while its cold outside. very seasoned. the chicken came out awesome. I think I had too many capers in mine.

    I never would have thought of pairing the carmelized onions with the bread but it was out of this world and something I will make over and over again!

    I made this recipe and my whole family loved it!!!! Even the three lil ones ate it and they wanted more. Lookout Popeye...here we come.
