I played with this recipe to make it a little healthier for me, and it still came out pretty fabulous. I skipped the bread altogether to made it non-carb (grease the dish with butter to make sure it doesn't stick. Instead of the half and half, I actually used 2% milk and skipped the last salt step as the veggies were already pretty seasoned . I topped the liquid mix with a pintch of nutmeg for a bit of a kick, and reduced the amount of cheese by half... It turned out soooo delicious that it didn't bother me not to follow the original recipe.

I have never made a quiche before and I made this last night. It was incredibly easy and tasted great. My boyfriend and I gobbled it up. I had all the ingredients except fresh oregano, but the dried stuff worked just fine. I also ended up only baking mine about 35 minutes, so keep an eye on the oven. Truly a keeper!

This was by far one of the best dishes I have ever selected from the Food Network. I was very impressed with how all of the flavors worked together. Goat cheese is now ranked amongst the top 3 of my favorite cheeses. Excellent choice for a dinner and is very filling. I added some shrimp to my recipe and it was FANTASTIC!!!! Next time I think I may add some type of wild mushroom as well.

This dish was absolutely great! I used homemade sourdough bread for the "crust" and it was delicious. The goat cheese makes it unlike most quiches and the combination of the cheeses really works.
