Seriously this is a great base for a salad. If you just eat the salad as the recipe calls for then it's a good appetizer or side, but if you add a little extra then it can easily be turned into a great main meal. I tried both red and white wine vinegar for the vinaigrette and I actually preferred the red wine (promegrante infused. I also added chicken chunks and feta cheese.

I fix this salad all the time, & it is so good. I put goat cheese or feta cheese on top, just a little for creaminess. YOu can substitute other juices or just a little raspberry, or strawberry jam instead of the pomingranit juice in the dressing to change it up a little. Just use what you have. You can slice a few strawberries on top to add a little color and flavor.

This is a quick and easy dish, I just did not care for the dressing, it lacked flavor. I did add granny smith apples and gorgonzola cheese to liven it up a bit. Any suggestions on how to ramp up the flavor of the dressing would be welcome!!

I love meals that I don't have to put too much thought into. Although the pomegranate juice was 7 bucks! I follow the directions & it turned out really well. The favors & texture were perfect

I've made this three times. The first time I needed enough for seventeen, so I tripled the recipe. Not wanting to buy the pomegranite juice, I substituted 1 cup of pomegranite jam, which I melted in a tiny saucepan. I also added the arils from a pomegranite (such fun!, thinly sliced Granny Smith apple dipped in lemon juice, some crumbled Gorgonzolla and sunflower seeds. It was not only very fast to assemble, all the guests really liked it. The pomegranite "jewels" were a beautiful touch. Any leftovers keep very well. Since the first time, I now skip the Gorgonzolla and add some jam to the pom. juice. A never fail combination !

I made this recipe for dinner when I had some friend coming over. It had an excellent flavor and looked great. Added a nice side to the meal.

We love this salad. I first fixed this last Christmas with a Pomegranate sweet potato & pork loin. It is a smash hit with the family! I add feta and pine nuts. I'm going to try the other things suggested. I'm drooling just thinking of it.
