My family lovvvvessss this recipe. It was so good and easy. They said it was better then Kentucky Fried. This is a keeper. The only thing I suggest is while you have the food processor out, grind up enough cereal and crackers so you have enough for two batches. Then put half the crumbs in a zip lock bag for a night to use another night. This makes it a quick and easy meal to make any night of the week without a hassle.

this was truly the most delicious "fried" chicken i have ever had! It was extremely moist from the mustard and had loads of flavor and crunch. I enjoyed these chicken bites with zucchin "fries" and it was a match made in heaven. I actually PREFER this chicken over fried!

I tried this recipe last week and it was the best "fried" chicken we've ever had. I used twice the amount of paprika and cayenne pepper and since I didn't have Dijon mustard I substitued horseradish mustard. It added a little "kick" but since we love spicy food it was great. Even my 4 year old granddaughter liked it. I will certainly make this again.

I've made this dish many times now because it's so delicious. The first time I followed the recipe exactly and it was very yummy, but the following times I added more cayenne and even added about 1/2 tsp of crushed red pepper flakes. That change gives it more of a kick since I love spicy foods! This is definitely worth your time! Also, I don't think shake n bake holds a candle to it like others are saying!

This recipe is so simple yet the flavor is AMAZING!! I've made it 3 times now and my family asks for it more and more. I always have to put aside a little of the breading mixture before adding the Cayenne as my 6 yr old doesn't really like spicy food (yet!. Plus I add a little more Cayenne to the rest of the mix to give it a little more kick for everyone else. I've never used it on anything but boneless skinless chicken and it still comes out nice and moist. I've used the Melba Toast and Crispex mixture and the bagel chips and Crispex mixture and they were great. One time I used Ritz Crackers and Crispex, and while the chicken didn't come out quite as crispy that time, the flavor was still great. I just wanted to say thanks to Food Network for all your awesome recipes and amazing chefs. Since I've started watching and experimenting in the kitchen, my family and myself have not only lost weight without really trying but our meals are much more exciting and pleasant!

This recipe is delicious. Excellent, healthier substitute for fried chicken, but just as good; I would choose this over fried chicken most of the time. Will be making this a summer (and picnic staple. Also a mustard based potato salad makes a perfect complimentary side (this does not mean that the chicken has any sort of mustard taste.

*********** I thought the ingredients sounded a little funky and thought it wouldn't come out all that great but it was amazingly delicious! I used a whole small box of multigrain melba toast and Crispex and it really came out a lot like KFC. I don't have a food processor yet so I just used a traditional potato masher to crush the crumbs up really good.
Im not a fan of Dijon but you can't tast it at all once it's cooked. For the chicken I used the frozen skinless breast tenders since they were a great size. I dusted them with garlic salt before I continued on with the recipe...
We sprinkled a little Frank's Red Hot Sauce over half of them so we could have some "buffalo" style. HUGE hit with my husband! Definately worth trying and it's definately a keeper in my recipe book for healthy grub!!!!!! MMMMMM!!!!!!!!!!!!!!!!
