    This is really good, easy and healthy...what's not to love? Well, after reading the reviews, I added lemon juice and my dip still turned brownish. Next time I'll look for the brightest looking sun dried tomatoes I can find and I might cook the peas a bit first, to see if that will help preserve the color. Despite the odd color, this was a big hit with everyone.

    Every time I make this and it's been over 30 times so far, my guests ask for the recipe. Not only is it healthy, it's pretty (arrange the endive in circles around the dip if you don't grind the peas and sun-dried tomatoes too much in the processor. I used 10 ounces of peas and didn't change anything else. If people find it bland, perhaps they need to add a little more salt.

    This one is a keeper. To make it even lighter on the calories, I found the olive oil can be left out. I also tried it as a "Thai Taco" variation. Endive leaf, a little warm basmati rice on top of that, and then the sun-dried tomato/pea mixture with a little green curry paste mixed in on top of the rice. This is why we watch the food network.

    Without having read the comments on the off color of this dip, I added some lemon juice as I was making it and it remained a bright green color until it was all eaten up. will definitely make again, I ate it with rice crackers, will try endive next time. Jeri C.

    As with one of the previous comments, mine turned out a very unappetizing brown color. Maybe i blended it too long! But the taste was good if you could get past the color. I have made lots of Giada's recipes, and most have been great!

    This is a great recipe, easy to make, tastes great and it's healthy...I did however, use sun dried tomatoes that were not in oil...I figured we could do w/o the added calories...it was a big hit...I even used it as a sandwich spread...yummy!

    I happened to buy some endives the other day to make my usual endive salad (mix sunflower oil, good Dijon mustard, chopped endive and walnut pieces. I decided to make this instead, and so glad I did. Delicious and super easy to make. Thanks, Giada, for a winner!
