    I hated meatloaf until my dad came home from the hospital... And when he was offed anything he could have to eat... He asked me to make meatloaf. Luckily I found this recipe bc it has made me rethink my disdain for meatloaf. Super juicy and flavorful. Makes great leftover meatloaf sandwiches (I can't believe I'm even saying that!!

    The sauteed veggies is what makes this dish! I substitute an Anaheim or other mild chile instead of the bell pepper, otherwise, I follow Emeril's lead...so good, it's a staple at our house!

    I have made this recipe several times now and it just gets better and better! I have BAM! in my spice cupboard and use it all the time : I like the onion, celery, and green pepper chunky and I think it tastes better if you cook it down and caramelizes. So easy and yummy! One of my favorites!

    an excellent recipe and really quite easy. I live in S. Louisiana, where it's easy to find 'trinity' ready to use. (A mix of chopped onion, bell pepper and celery So no chopping for me. Plus, I use Tony Cachere's, or whatever seasoning blend you have on hand. I don't change anything else from Emeril's recipe.

    I do not come from a long line of family cooks so I have to go in search of great recipes to serve at our family Sunday dinners. I have tried several meatloaf recipes looking for that one that would become a family favorite. And I found it with this recipe. DO NOT change a thing, it is perfect exactly as Emeril created it.
