I made this for company last night and it was flavorful, everyone loved it.

Love it! Seriously one of the best things I've ever eaten. I only halved the squash so the butter mixture had a little well to sit in, and I lost less seasonings to the baking dish. Then I mashed it and ate it right out of the rind. Tastes like delicious pumpkin pie - can't wait for Thanksgiving just so I can show this off!

I love this recipe. I am not a fan of squash and I was finding recipes that I could enjoy. I take the squash and cut on each rib and peel the squash. I brush the mixture over the whole piece. Halfway through cooking time I flip the squash pieces so they get caramelized on each side. When it is done I eat it with a fork - no scooping. This is a recipe that I have made many times and for company and it is always a hit.

This dish was very tasty and smelled wonderful while baking, it reminded me of apple pie. I think it would make a great first impression of acorn squash for someone not familiar with it, for those not too fond of vegetables.

I wish someone would have liked this but noone did. I'm not a fussy eater whatsoever but even I couldn't finish a quarter of one. One star is only for the ease of the dish. I won't make again.

Made this tonight for a main course and it was great. Added some pistachios in as well.

I really liked the combo of spices and ingredients used to jazz up this veggie. The only thing that was difficult is that it took much longer than the suggested cooking time to get it completely cooked all the way through. It could have been my stove or the size of the acorn squash I was using. Great recipe all in all though. And I turned the leftovers into baby food for my daughter! She loves it!

This was so, so good! Great idea, Emeril! I served for Christmas instead of sweet potatoes and it was a hit! I will definitely make again. The picture on the website is a little deceiving. The squash does not turn out as black, it actually looks much, much better and was absolutely delish!
