    Next time I will make this with regular mozzarella instead of the smoked. The sauce is fantastic and I will make that whenever I can.

    Recently served this for a dinner party and it was definitely a big hit! I make the recipe ahead of time, refrigerate and then return to oven to melt mozzarella. What a great time saver!

    This was such a simple and delicious recipe. Even the people in my family who don't like chicken loved it. It tasted authentically Italian to me, and it was easy enough for someone who isn't a great chef to make. I can't say I loved it enough.

    I love this dish! I make it atleast once a month and my boyfriend, who can eat jalapenos by the handful, even gets the sniffles eating this fiery dish. NOT unpleasantly hot at all! The honey and syrup cut the bite dramatically. If serving to children, you might want to split the dish and then add the chipotles to the according dishes, b/c that's where the heat is.

    BTW, the rice is wonderful in any dish. Since then, I only cook my rice (also mashed potatoes in chicken stock. Makes a huge difference!

    OMG this is wonderful and Filling. The sauce is spectacular. Emeril you did good. do exactly what he says to do. Wonderful recipe for a cool day.

    Excellent and tasty. I used a tomato and basil jarred sauce which cut down the time considerably. I'm not a very good cook and this recipe turned out great. My husband, 3 year old very picky eater son, and 20 month old son all loved it. Next time I plan on using a roasted garlic tomato sauce instead, because I love garlic, and to make it even faster, use thin sliced chicken breasts instead of whole chicken breasts.

    I ran out of time to do this with the carmelized tomatoes so used a "canned" sauce. I will save the good sauce for another batch- BUT it was a hit for my family.

    Roasting the tomatoes for the sauce in this recipe gives this dish amazing taste! You get an explosion of flavor in that first bite, and (bonus!,it smells great while it's cooking. It was not at all difficult to make, and I will certainly do it again.

    My husband said he may never have a chicken dish this good ever again! The highest compliment in my book! Also, I used canned diced tomatoes (that is what I had on hand and the sauce was smoky and full of flavor! Thanks for the recipe and inspiration!
