I was so disappointed in the 'cake' of the cupcake. I followed this recipe exactly. I had so such trouble frosting the cupcakes the cake was so dry it would crumble and just fall apart. I gave this recipe 3 stars because the decorating was so cute on the ones that I did manage to get frosted. Will use the decorating part again and the frosting was very good. But I would use a box cake mix next time.

I really like this recipe. It calls for just the right amount of frosting (so many recipes leave me with extra that I feel bad about throwing away. And the decorating is so cute. I used sour watermelon slices for the ears--really cute, and just decorating gel for the eyes. I did have to cook the cake longer than indicated. Would definitely make these again.

This cake was so easy to make. I didn't make the cupcakes, I made a 9x13 (actually my 15 year old did. It turned out to be only an 1" thick (thin but that was o.k., who needs a 3 " cake anyway. The flavor was fantastic, the ingredients easy and the timing was just perfect. I will keep this recipe in my history and pass it down as the easiest red velvet cake to make. I watched Saturday and my daughter made it Sunday, you made it look so easy and it was:!

These were good cupcakes not too sweet at all like some other recipes, but I wouldn't have added the vinegar the next time I made these again because it gave them a weird after taste to me. I think if I had left all the ingredients at room temperature and soften the butter better to cream it in with the sugar it would have turned out better, still tasty cupcakes though!

These cupcakes were so easy to make. I watched the show on Saturday and made the cupcakes on Sunday evening. They were soooooo delicious!!!! My daughter made another batch on Wednesday: I did reduce the food coloring to only half.
