I love baking cookies for the holidays - but with an increasing shortage of time and a growing concern about the food we eat - holiday cookies have slowly dwindled away from my Christmas "must-do's". These cookies put the baking back into my holiday schedule. They are easy to make - look like you slaved over them and taste fabulous. They're now one of 2 cookie recipes I'll make EVERY year.

These are soooo good! What I most like about this recipe is that it is healthier than most cookie recipes, with the oatmeal, whole wheat flour and pecans, but doesn't taste like a "good for you" dessert. I especially like the crispy texture!
I made this for my parents who were visiting for the holidays. They loved them!!

I love these cookies. They are easily changed to vegan cookies which is perfect for me. The ginger didn't overpower the other flavors as I was worried it would.
