In honor of our departed Grandmother, we make Divinity every year at Christmas. Her Divinity always came out... differently! We usually ate it from a bowl with spoons! This recipe is so wonderfully light and fluffy, I don't think anyone will mind!

I had a lot of trouble with this recipe. My stand mixer bowl is so deep that I had to use my handmixer to whip the egg whites halfway before the whip attachment would even reach the peaks. Also, my candy thermometer is designed to keep the bulb off the bottom of the saucepan, but the mixture did not come up high enough for the temperature to register. I had to keep tilting the saucepan.
Maybe if I doubled or tripled the recipe next time it will work better.
But... the end result is delicious.
