    I love this recipe. It is very Mediterranean. I didn't have parsley on hand so I added oregano instead. It brings me to my Greek roots. It is light and perfect for a side dish, snack or small lunch!

    This is one of my favorites! I do not like tomoatoes so I toss in chopped artichoke hearts instead. Its good both hot and cold. Yum!

    I tried making just your average couscous as a side dish, and its pretty awesome how just a little bit goes a long way, I was not to thrilled but I went to Souplantation a couple of weeks ago and LOVED there lemon couscous so I am going to try it for dinner tonight.. hope its good :

    Love this recipe! My husband and I do not like olives so I made it without, but left everything else the same and it turned out great. We have made this many times.
