    We made a lot of sauerkraut this summer since we happened to have an abundance of cabbage, and now, we're looking for ideas to add it to recipes. This is excellent! We're vegetarians so we use Field Roast apple sage "sausage" and chik'n broth. Substituting those, I followed the recipe exactly. It's great!

    it was really good ! my parents really liked and I'm going to give it to my grandparents tomorrow! i would boil the potatoes separately so you don't need to wait the last 45 minutes though. and i would also put the onions and celery before the sausage but that what i think. it's uber tasty !

    I have been making this for the last 3 years too. It is the perfect soup for fall and winter. It is easy to make and full of flavor with the smoked sausage, garlic, sauerkraut, and garlic. I make double the amount because it makes exellent lunch leftovers and keeps well in the frig for a long time. I am making it again tonight and serving it with some good artesian bread.

    This is such a great fall soup. My husband always requests it on a chilly day and it is always delicious! Definitly recommend! Just make sure to drain & rinse the sauerkraut really well and don't add any additional salt unless you need it for taste at the end.

    I just wanted to say that I have made this recipe for the past three years and my entire family loves it. They all look forward to me making it and they ask about it all of the time. It has a wonderfully flavorful broth and goes great with a toasted garlic ciabatta. Thanks for reading!

    I made this soup with a combination of Pecan smoked garlic sausage(pork, Bratwurst and "Bavarian Style" sauerkraut(sweet with caraway seeds...Awesome!

    I used a German Kolsch beer instead of the cider, for one soup... and a German Rauchbier (smoked beer!! on another on my second batch of soup...

    (1/2 pound each of sausage

    Big bowl of Sauerkraut Soup, Crusty Bread, and a couple of Beers, now that's comfort food!!

    I was intrigued by the idea of sauerkraut in soup so I tried this recipe. Emeril you didn't dissapoint. My family loves it, even those who don't love sauerkraut. I did add more potatoes though and since we are not alchohol drinkers, I used regular apple cider. I am not sure how different it would taste with the hard cider, but we love it this way.
