This will be the 2nd year I've used this recipe - it's delicious.
I add the neck and gizzards, liver, etc, shred the meat to add to the gravy because my family really enjoys giblet gravy. But for those who don't care for that, I reserve some without. Everyone is happy!

Explosion of flavor. If someone gets this wrong, they need to send out for food.

I just watched this show and I noticed some discrepancies. On the show, Tyler used 2/3 stick butter and 2 heaping tablespoons of flour. These are normal measurements for a roux. He also just cut the garlic bulb in 1/2, not smashed. Used 15 peppercorns instead of 8. When making the roux, he did not use a mixture of butter and olive oil. Most of these aren't a big deal, but I would use the above ratio of butter and flour.

This recipe solves the problem of gravy for an army. Very nice rich flavor.

I was truly disappointed in this recipe. I took the time to make many things ahead of time the day before Thanksgiving, and was very pleased that I made stock and gravy-- until I tasted it. I followed this recipe to the letter, and it was bland and thin. Salt didn't help either. There was no depth of flavor. My roux was beautiful, my vegetables fresh and cooked as instructed. Not only did this recipe has zero flavor, but it didn't make as much as indicated in the show. I still had the same amount had I just used the drippings from the turkey. Very disappointing from Tyler.

Will always use this recipe when serving turkey. It made the difference. Since there is no set amount for liquid used in the recipe, success is going to depend on the amount of water actually used. So be a little more flexible in the amount of flour used if necessary. It will thicken. Cheer up people!
