    verjus is a grape vinegar. You could use fresh lemon juice instead.

    I am very anxious to try this, however, not having seen it prepared on T.V. I do not know what verjus is - Can someone enlighten me?

    This went great with the pork gyro recipe and was a refreshing soup to have during the hot summer days. Kept it chilled and made for a nice snack the next day; would definitely recommend.
