    Excellent recipe to work off of. I substituted shrooms, in place of the turkey sausage, and scaled the whole thing down a bit. Worked out great. My first lasagna, couldn't be easier.

    This is by far the best tasting lasagna that I have ever made! All the ingredients just work beautifully together. I made some substitutions to make the recipe even ealthier. First, instead of hot Italian sausage, I used 2 lbs. of ground turkey breast, which undoubtedly cut some of the fat, but also did away w/ the preservatives in pre-made sausage. To get the same flavors, I increased the red pepper flakes, added a little kosher salt, increased the essence, and then added 1 1/2 tsp. of Italian seasoning and 1 tsp. of fennel seeds-worked perfectly. Also, in addition to the red bell pepper, I snuck in 2 carrots finely diced and used red onion instead of white or yellow. I also didn't have jarred marinara sause, so I used a 28 oz can of organic fire roasted tomatoes and a small can of no salt added organic tomato sauce. Again, worked perfectly. As for the cheese filling, I used the lowest fat options that I could find and increased the spinach a little (3 cups. I also only used about 3/4 cup of mozzerella on the top (just enough to lightly cover the lasagna b/c I was worried about the amount of cheese already used for the filling. Used uber-healthy Vita Spelt whole grain noodles, and let me tell you, this recipe topped any ground beef and regular noodle lasagna that I have made in the past. Also, don't forget the fresh basil, it really adds to the flavor. 1 2 inch by 2 inch serving is VERY filling-this could easily feed an army! It's a fair amount of prep work, but you get a lot of food for the effort.

    This is by far the best lasagna I have ever made or even eaten. I made it without the sausage and it was still great. The spinach is what really makes it good! Since I had a lot of leftovers, I cut it into one serving portions and froze it. It is just as good this from the freezer as it is from the oven. :-

    Just made it last night, and the results were so great that I just had to sign up for the site so I could share my enthusiasm. I'd give it 6 stars if I could.

    My parents are visiting and fancy themselves ground turkey haters. I still went right ahead and cooked the dish but never mentioned that I was not using ground beef. They loved it and tried to attribute the slightly different texture of the meat to my adding what they figured was hot Italian sausage.

    I never said a word until this morning when they wanted the few leftover squares for breakfast. They were shocked and confessed that even at their age, they can still learn a new trick or too. I emailed them both the URL to this site so I expect they may be joining shortly as well.

    The only thing I have to say is that if you aren't a fan of spicy food, you may need to cut back on the red pepper or use a mild sausage My mom and I thought it had the perfect heat level, but my dad needed a cup of Lactaid with his this morning. (Granted that's a normal occurrence since he likes his food a little on the bland. side.

    turned out really great... me and my fiance really liked the kick from the pepper flask and the hot italian sausage. just one tip: the "essence" dry spice mix recipe makes way more than you actually need so you may want to scale that recipe down so that you don't have so much of the spice mix leftover.

    I made this for my husband and he loved it! He's one of those guys that hates eating healthier versions of meals, but he really liked this one. One thing I changed was I added mushrooms to the marinara mixture. Cooked them with the red pepper and onion to release some of the water with the mushrooms. Delicious!! Will definitely make this one again and again!

    Just made this tonight and it turned out AMAZING!! I am on WeightWatchers so it was nice to eat a yummy meal that is low in points (8. My fiancee also thought it was very good....you can really taste the basil and the turkey sausage gives it a kick. It did take awhile to prepare and bake, but well worth the effort.

    I substituted red pepper flakes for the paprika.. so it was a bit on the spicy side. All in all, a good Sunday night dinner.
