This one is a keeper. Very flavorful. I added about 1.25t cayenne pepper cause our family likes the spice and it was a true hit. Also omitted the mint cause didn't have any on hand.

I have made this a few times and really enjoy it, I add some cayenne pepper as well to make it extra spicy. Normally I do not have mint around so I skipped on the mint and added cilantro.

this is wonderful.... and by blending the onions and rice my picky eaters didn't realize they were eating onions . I have to add on to this review because they are all raving about this being "the best thing ever made" by me. I did add celery with the carrots and instead of cooking the chicken in the broth I had roasted it in the oven first. The perfect amount of curry. I may never make chicken noodle soup again!

I thought this soup lacked something. Even after doubling the amount of curry powder it still was not very flavorful. I removed the skin from the chicken before cooking it to reduce the fat, so maybe that decreased the flavor. I am giving it 3 stars though because pureeing the rice and onions into the broth makes for a very creamy consistency.

Delicious! This is supposed to be a creamy soup - thus the blending of the rice. So those who didn't blend it ... just got chicken and rice soup! (Which is DELICIOUS of course, but nothing out of the ordinary! The combination of flavors is unique, and creates a wonderful craving! I followed other suggestions and added plenty of celery and carrots. I also have been known to serve it over fresh spinach (it cooks it and gives me the iron and vitamin A I need. I've added broccoli, cauliflower, and other stuff. You just can't go wrong with these flavors!

Both hubby and I loved the soup, and hubby doesn't eat a lot of curry. I would add more carrots next time, and reduce fresh herbs by half, I dumped all in soup mistake!! I would let each ind. put the herbs in. I added more lemon..... a real hit absolutely loved pureeing rice to make cream base. Am sending recipe off to family and friends.

Loved it! Lasted about 3 days in my house, a better heartier chicken noodle soup in my honest opinion.
