Loved it! I increased the chicken stock by 1 more cup because I increased the rice to 2/3 C. I agree with other posters and used 2 tsp of madras curry powder. Since I love chicken, I increased that also. I used 3 good sized chicken breast halves (probably a little over 2 pounds. I only pureed half of the rice & stock mixture. I would suggest dialing back on the dill & mint to 2 T each. Thanks Maggie & Mithun for joining me for soup and being my guinea pigs! I will be making this again.

So tasty!!! I actually changed it a little by using barley instead of rice since that is what I had on hand and then didn't blend them. I think I would add more broth next time.

So good! Yes, I agree, add more chicken and veggies. I didn't add dill and it was still tasty. I would also probably double the recipe because it is so good would be good to freeze and have some for another week. I love the fact that the rice mixture adds nice creaminess and texture. I might try to use a rotisserie chicken next time to save time, but not sure if the flavor would be as good if you do not boil the chicken in the broth.

So I am a Texas girl, far from New Delhi, but this is awesome. Just the right spice and creamy texture surprisingly with no cream. I did reduce the volume of fresh mint and dill to 2 T each, since my husband is not a huge fresh dill fan, increased the chicken since there is not much carb., added more carrots and portabello mushrooms sliced into the chicken broth portion. Loved it and will make it again for sure, maybe with more veg.

Loved this recipe. I will definitely be using it again. Great alternative for thickening. Blending the rice and onions gives this soup and a beautiful creamy consistency. No need for any starches gelatin's or flour.

I creaTed this account just to review this soup! That's how good it's is. I followed the directions exactly as it was my first time making a soup. It's so flavorful, the mint with curry and rice makes for a nice hearty feel, but also a crisp taste. Almost wish that it was the beginning of winter around here so I could make this for the cold days!

Wow, this was fantastic! I had doubts because of the ingredients and the simplicity of the recipe but it was REALLY good. The dill, mint and lemon completely make it, don't leave those out. As other reviewers suggested I doubled the curry and added more carrots. This was so good, I can't wait to make it again!
