What a fantastic soup!!! The combination of the curry and the chicken along with the fresh herbs is phenomenal. I really liked the texture of the soup without using the immersion blender on it. It was even better two days later. I love this recipe - and it is so easy to make. The Food Network Magazine crew deserves 10 stars for this recipe. :

Awesome. I almost made it without dill as I forgot to buy it on my shopping trip, but my husband saved the day and ran out to get some. The dill and mint, topped off by a little bit of lemon juice in the soup make it different and very yummy.

Made this for dinner last night. Pretty good! did make some adjustments...added some garam masala to the rice and took the advice of others to add a little bit of more curry...I did also season the chicken with S&P and added more carrots and some celery (glad i did. Came out great, will defintely make again! maybe add some garlic next time! Didn't have any mint, but added the dill and some cilantro. I dont think you need to puree the rice, left it whole and added some substance to the soup

Awesome soup. Once you puree the rice mixture, the soup becomes very cream. Mint, Dill, and Lemon are a must!

Very good. Pretty easy to make and a nice, hearty soup with low calories. A full meal - just add some crusty bread.

This was fantastic! Agreed that double-up on the curry is good as well as more carrots, I also included celery. Threw in cumin as well based on another review. I cut back on the mint as I didn't want an overpowering mint flavor. And agree with Cindychops.....the fresh dill and adding the lemon juice is a must!!

Wow - loved this soup. Made a few changes as suggested by other reviewers. Doubled curry (didn't have Madras so threw in some red pepper flakes with onions. Also, added 1/2 tsp of cumin and doubled carrots. Don't foreget the fresh dill and lemon - absolutely fabulous!
