This soup was DELICIOUS!!! And well worth the prep time. I do everything by hand, so the prep work was not an hour, it was more like 1 hour. I used Turkey Sausage. I am also a CSA subscriber so this week I had russett potatoes. I diced about 6 small potatoes and added them for the last 1/2 hour. A great meal for a cold NW night. Thanks Ina!

This recipe looks almost identical to the Lentil Soup recipe in one of Ina's cookbooks (minus the sausage. The first time I made it I accidentally doubled the amount of lentils in the recipe, and it was still amazing--just thicker than the original recipe, I guess, but I like a very hearty soup, I may try this with turkey kielbasa. But even without sausage it is a great soup--makes a TON, which is great for freezing!

Easy to prepare. Great flavors , my husband walked in the house and commented how great it smelled. The soup is very hearty, I did add some barley to the recipie. The soup is also healthy which makes it all the more feel good.

The
Barefoot Contessa is a genius every one of her recipes are wonderful. I have been making Lentils soup for years from the Moosewood Cookbook but this is it. However I did not add the sausage and aded wine vinegar at the end instead of wine.

This soup is amazing with or without the sausage. I have even tried it with Turkey and it is out of this world.
