    Loved the recipe ..but with some reservations:
    I used almost a whole package of spinach(what is a bunch of spinach, anyway as listed in recipe?

    My store did not have veal scallopini so i got some veal blade chops and cut out the bone,then pounded it but it IS thicker. That said,it was still excellent.I added some of Emeril's " essence" to the ritz cracker mix.Did not use the cream.

    I have an electric stove which always takes longer to cook than the recipe's directions.This is a problem i always have on ALL the recipes the food network has because they use gas stoves,not electric.

    I watched Paula make this, and the writer forgot to add the garlic. Paula used the garlic in the tube after the onion was added in the skillet and before the spinach. I also think that Panko works for the veal too.
