    If you follow directions and have some knowledge of cooking this recipe will turn out FANTASTIC!!!
    I enjoyed with hot sauce Louisiana style, yummy.

    This was a great dish, great flavors not much fuss in the prep department. I added an extra half pound of ground beef only because I only had two pounds of eggplant instead of four. Worked out terrific! I also used panko bread crumbs instead of regular which gave the top a wonderful crunch. This a for sure make again dish!

    Emeril! It sounds so good and I wanted to make it. But the picture here looks even worse than it did on TV. I do not think my husband would touch it because he is very visual. I think I am still afraid of eggplant.

    My family is from Baton Rouge. This dish has all the flavors you would expect from good ole Cajun cooking. To make it easy do all your prep work first. You wont be sorry you made this recipe. Big props Emeril!

    I made this reciepe trying out new veggies that I don't normally eat. The flavors of the meats and veggies were good, however the overall texture of the meal was VERY mushy. I would not make it again.

    Chef, I got this recipe on the www thing a few days before your Cajun show aired on Oct 19. My Wife and I prepared it yesterday(Oct 18and had it for supper. It was delicious. We had some leftover,so we had it again for supper tonite just before the Cajun show aired and it was just as good if not better the second time around. We will definitely prepare this again.     This recipe is very good. It is more troublesome to make than the easy rating though. Believe me it is worth the work though.
