Admittedly we changed the recipe a bit to suit our taste buds....but we only left out the maple syrup and used a bit more than a 1/2 tsp red pepper flakes. With these changes the collard greens were amazing!!! Next time I will keep the same amount of red pepper flakes that we used but will add just a touch of maple syrup. I am sure it will be wonderful. Follow the recipe or change it slightly and it is still wonderful!!! :

Have made this recipe several times. Husband does not like collard greens - or so he said. He goes back for seconds everytime I serve this. Now even tells his mom he likes collard greens! this last time didn't have quite enough collard greens, but had some fresh bok choy left over from another recipe - added the bok choy - fantastic. Love using the Canadian Bacon - just the right touch.

Best I've ever tasted! But since my husband is vegetarian, I used the veggie bacon instead of Canadian bacon. But really, really yummy!

Wow! I am from the coast of SC and this was most definitely the best recipe I've used for collards, which are agreeably difficult. I am also a nutritionist, so I've been playing around with different ways to cook collards without hamhock. This was perfect! Followed it to the T and so pleased.

Friends could not stop raving about this recipe. People of all ages wanted the recipe. We served this at our bbq yesterday, and people kept going back for seconds and thirds even skipping over the bbq! That was a surprise.

Okay, I am trying to eat healthier, and these collard greens were super yummy. The maple syrup took away the tartness that can make collard greens less than appealing. Thanks, Ellie.

This is my first time making collard greens as well, had them delivered in my fresh produce box. Everything was great about this, it had a nice distinct flavor. Didn't even need the full 30 minutes simmering, tasted perfect at 15. Will definitely make again.
