Delicious! My 11 yr old balked when she saw the ingredients and insisted she would not like it. She came back for seconds and took some to school for lunch! I took leftovers to work and everyone wanted the recipe! Easy and awesome!

I'm giving this 2 stars because of the enchilada sauce, which is very good and easy. I prepared it as prescribed and it was one mushy mess! I would NEVER make this again and cannot understand how so many rated it so high. Maybe you should NOT cover it while baking??? It is a throwaway, unless I can figure another way to use the filling....

Made this for a potluck. 4 guests were from Mexico and they loved it! They asked for the recipe. Great recipe for using up leftovers. I have made it with pulled pork, bbq chicken, leftover pot roast, etc. EZ to make and always turns out amazing.

I made this recipe with some leftover smoked pork shoulder - about 1 1/2 lbs, used flour tortillas and about four cups of cheese instead of 3 cups. It was awesome!

LOVE this recipe! Next time would probably cheat and use a roasted chicken, shredded. And we added more cheese to the top. Never enough cheese!

Made this for a potluck with a few modifications which I'll mention, if only to highlight that unlike baking you don't have to be exact.
1 I added more cheese (total 3 cups and used a mix of cheddar and jack.
2 I also used a milder dried California chile since I wasn't sure of the spice level tolerance of the group.
3 I bought a cooked rotisserie chicken and diced it up.
Other than those small changes based on time/preference, I followed the steps of the recipe exactly and it was good and quite easy to put together. Made the sauce hours before, so there's no need to do the whole recipe straight through if you don't have time.

Alton, you've done it again. This is my forth meal I have prepared and my wife told me that it was better than hers! She love it and i did too. Of course, it's not mine, it's Alton's, all i did was follow the recipe.
