I followed this recipe exactly and am not an amateur baker and my dough was rock hard! I used cornmeal because the polenta I had was bad. I made the dough one day in advance which it states refrigerate at least 30 min or up to 1 day. I was looking forward to trying these cookies and I am so disappointed!! I will not attempt a second try at this recipe because I do not think it will change the outcome. The reviews that Ive read have not been favorable either so not about to waste more time on this one. Sorry Giada....

I saw this cookie recipe on her show. My mom spit it out in the sink and my 8 year nefew took bite and sat back down. The filling good but the cornmill in the cookie was too griddy. Will not make again! What a waste!

After reading the reviews for the recipe, i was hesitant about making them.. but since i had every ingredient on had, i went ahead and tried them anyway.
    SUBSTITUTIONS:
-I used Corn Meal Mix (a mix of all purpose flour, polenta, and baking soda, found in the baking isle of your grocery store instead of the polenta since everyone said the polenta was too gritty
-I took out the baking soda from the recipe since the Corn Meal Mix already had baking soda in it
-i used the zest of one whole orange for the cookie batter, and the zest of one whole orange for the filling

After making your dough, do not put it in the fridge for more than 1 hour!!! i made the mistake of putting it in the fridge overnight and it was rock solid when i took it out.. i had to wait 20 minutes before the dough softened up

Cooking times will vary depending on thickness of your cookie and the kind of baking sheet you use. My times varied between 7-13 minutes on an aluminum baking sheet wrapped in foil.

Overall, these cookies are good. I gave it 4 stars because its SO BUTTERY!!! good thing for me since i love butter, but if you're not a butter fan (like my roommate then you might want to stay away from these cookies.

    I hope these modifications helped!!

I was trying to make these cookies for a bridal shower, and this recipe does not work! I was so frustrated because I had told everyone about the cookies, and even bought a really nice cookie cutter for them. I would not recommend this recipe to anyone who doesn't know how to fix it. THIS RECIPE WILL MAKE YOU CRY AND IT WILL WASTE YOUR TIME AND MONEY!

I think this is a wonderful cookie! Maybe it's an acquired taste, but I love it! Top notch!

Just plain terrible. Does anyone test these recipes? The only thing good about this recipe was the orange filling. The cookies went in the trash. I wasted one half pound of butter on this recipe.

Please work on quality control - anyone in the test kitchen with the least qualifications should have caught this.

By the way, I'm a pretty good cook - next time I 'll study the ingredients more carefully. If I had, I would never have made this one.

I followed the instructions exactly, and the cookies tasted OK, and were a little fragile - but held together - but the cornmeal made them too darn crunchy and gritty. I may try them one more time with a finer grain polenta - but neither my husband or son would eat them - and there isn't a chocolate cookie in the world they would normally turn down. After reading the comments here I held off on making the filling until I knew the wafers themselves would be good - I'm glad I did. I love Giada, but this recipe was a fail for me.

These cookies were alright. I liked them, although a lot of other people felt differently. This is definately a love it or hate it cookie. The cornmeal makes it very gritty which I wasn't a fan of. Even though the Orange Filling was buttery, I though it tasted great. This could be a cookie you could bake with other flavors other than orange. Bake at your own risk. :

FIrst let me say that I've been baking for over 25 years and have tried many recipes from other Food Network chefs and have had great success. I made these cookies as per the directions. They looked fabulous...but then I tasted them. Blah! My husband thought they were awful too. The crunch of the cookie was nice, but I found the cookie to be too bitter and the filling too buttery. I re-reviewed the recipe to see if I missed something or got the amounts wrong. Nope. Not me. It's just a bad cookie recipe. Maybe that's how they like their cookies in Italy???
