    Absolutely delicious! An instant reminder of Summer fun!!! Added celery, red peppers, and slices of muenster cheese. French bread drizzled w/ EVOO and lightly toasted creates the perfect mix of textures. Just made these tonight & already have requests for round 2! We can't wait to enjoy this recipe again on a warm summer evening!

    I always go to Ina for recipes because I know they'll turn out- this was no exception I skipped the salmon for a quick dinner and was pleased as always!! Thank you Ina for being my go to gal!

    This is a really simple, and fun recipe that takes no time at all. Really great tasting. I put mine on puff pastry and it was awesome. I also made little hors d'oeuvres on crackers along with a thin slice of tomato, excellent.

    We substituted prosciutto and thinly sliced swiss cheese for the smoked salmon. After cutting the rounds and lightly toasting them, we added a layer of prosciutto and swiss cheese on top of the bread rounds and put it in the oven at 350 for five minutes until the cheese melted. Then we took it out of the oven, added the dollops of egg salad and put it back in the oven (now turned off to warm. Fresh dill from the garden on top and voila! An elegant Sunday supper served with fresh fruit on the side.

    This was a pretty basic egg salad but I really liked the addition of the smoked salmon and fresh dill. I added some minced shallot and celery b/c I cannot eat egg salad w/o either of the two. I also hand chopped the eggs which I think makes for a better consistency. I squeezed lemon juice on the salmon to cut the salt and served it as a sandwich.

    I made this for our family Christmas party and everyone loved it. One thing I did that made it easier to serve as little bites was I used a small cordial glass to cut rounds out of whole-grain sandwich bread slices (very very easy! toasted the bread rounds and used them to put the salmon & egg salad on. I loved how it was easy to make everything ahead of time.
