    This came out amazing. I chose to do one layer and make bars rather than a 3 layered cake. I only used 1 box on powdered sugar and there was still plenty of frosting left. Highly recommended.

    Simply delicious. Substituted Sugar for sucralose, used canola oil (@60% low-fat cheese for topping, and added some raisins and cranberries mix, best carrot cake I've ever had, my family loved it!!!

    Tastes Delicious. I stored my cakes in the pans overnight like stated except they would not come out of the pans when I tried to stack them.

    This recipe is very simple and delicious. The only part I do different is not letting the cake sit overnight. I let the cake cool on a wire rack and then frost it. I put in the fridge for an hour before eating. I also have mixed the cake flour with whole wheat flour and it still tasted fantastic.

    This carrot cake was awesome. With this one recipe I impressed my in-laws and husband! The cake was super moist and the icing was not overly sweet. I will definately be making this one again.

    I was not impressed. I sifted, measured, made sure that I purchased new baking soda as the cake was to be a present for my sister in law. The cakes turned out like pancakes. In the oven they looked great but as soon as i pulled them out, the centers sunk until they were almost flat.. I will not be making this cake again.
