    this salad was fantastic...very easy to make with a surprising taste....the Mint is amazing with shrimp...will be making this often. Perfect lunch salad when I have my girlfriends over.

    I served this with roasted potatoes and grilled tri tip. I added mixed greens right in as a "stuffer" and served it as a side dish. Not sure my family would eat it as a dinner meal without needing a second meal shortly there after but my five year old son ate a huge bowl. It was his idea to make it since he watched the episode of Ellie's show where she prepared this. I would make it again. Perfect for lunch in the hot summer!

    This was very tasty and so quick to prepare! The only change I made was to use frozen cooked shrimp instead of raw. A good summer salad.

    This is a lovely dish -- I thought the mint would be overpowering, but it isn't at all...don't overdo it on the lemon and you will enjoy it! This is a dish you can easily and quickly put together for a salad for company, or a light luncheon or buffet dish. I will definitely make this recipe again.

    I was surprised at how amazing the flavor of this dish was considering i do not like strong lemon-flavored dishes. Everything about this dish was perfect. Oh- and it was easy and quick!!!

    A new twist on an old staple food. The lemon and fresh mint really add a crisp unexpected refreshing flavor. Our family eats seafood all the time and now I have a new recipe! Thanks Ellie.

    I have tons of mint and was thrilled when I found this recipe. I made this up on Sunday and have enough for a healthly lunch for 3 or 4 days. I prepared mine on a bed of iceberg lettuce. This is delicious and very easy.
