After watching the episode that aired this recipe last week, I knew I had to try it!

A little apprehensive since I had never made cacciatore before... but this recipe was really simple and easy.

Received rave reviews from my family!

Hands down, this recipe is outstanding. My husband (who rarely comments on dinner said this was fabulous. Later, when we were getting into bed he said, "gosh that chicken was so delicious"! It was fantastic the next day for lunch as well. In the episode, Keith adds adobo seasoning to the rice...this makes a huge difference in otherwise boring white rice.

Now I understand why Bobby Flay lost on this one. I can't imagine this recipe being any better. My wife and I decided to try it yesterday, bought all the ingredients and the result was an absolutely suculent dish. This was my first cacciatore dish and it was fairly easy to follow. I need to get my hands on Keith Young's cookbook.

Excellent flavor and consistency. Flouring the chicken and frying it really seals in the flavor. Additionally the flour helps thicken the main sauce later. One word of caution though; it says 4 to 5 servings in the recipe. That is 4 to 5 hefty servings, I guess they meant for "firemen"....LOL.
