    I must admit this is the very best Chicken and Rice meal I've ever made. I used boneless, skinless thighs... and a little red wine vinegar to deglaze. The chicken was so tender .... Best flavor!!! It's gonna be a *go to* dish! Yumm!!!

    Just made a double batch of this recipe for dinner tonight, exactly as directed. Everything turned out fine, and tasty. I loved the taste of the sauce. Like a previous reviewer, mine turned more red in color than the photo shown here. Of course that's due to the tomato paste. It's like a chicken stew but with a slightly spicier tomato-based sauce. I loved it. I served it with rice, but I bet it would be great over egg noodles. I have a lot of "essence" leftover which is great so I can use it on other dishes (I like the combination of spices. NOTE--I did find this recipe as part of an appearance he did on ABC morning show. That recipe is almost identical except it states to dredge the chicken in flour before adding to pan (after seasoning with Emeril's seasoning. I might try that next time. Also, if your sauce is a little too thin, add an extra tsp or Tbsp of flour to thicken as needed.

    This is a delicious dish!I added a little redd and green pepper to the onions and garlic and helped out the chicken broth with a little white wine in hte last 15 minutes. As usual Emeril has really made my day!

    This was one of the best chicken dishes I have ever made! My family loved it even my picky husband. I used boneless skinless thighs and redused the cooking time 20 minutes. I didnt add the tomato paste but my family loved it so much I probably won't add it next time either. I reheated it the next day and served it over fresh rice and it was just as good the second time. It was my first time to use the essence and it was delicious I will be adding it to many of my dishes from now on.

    Mine came out a bit more saucy and red than the picture, but the flavor was good and everyone seemed to enjoy it. I also served it with mashed potatoes instead of the rice, which were very good with the gravy/sauce that was left over from the chicken pan. This was a nice change of pace from the usual baked chicken.

    I have made this chicken several times now. I altered the recipe just a bit and it still is delicous! I didn't have tomato paste, so I added 1 cup of tomato sauce and 1 cup of chicken stock.

    My husband took 2 bites and said that this recipe was definitely a 10. He also said that if I made mashed potatoes instead of the rice, it would be a 12. He thoroughly enjoyed every bite(He had 3 thighs This goes into my keeper file. Thanks Emeril for a fabulous recipe!!

    Love this recipe! This is my boyfriend's absolute favourite meal and he requests it once a week! I follow the recipe exactly, the only exception is that we prefer it on egg noodles instead of rice. For anyone who says the chicken isn't cooked, it gets braised for 30 minutes on each side when you put it back in the pan so it definitely gets cooked. Absolutely delicious meal, thanks Emeril!
