Brown 1 cup white rice in 2 tablespoons of oil. Dice 1 garlic clove, small tomato, small onion, small bell pepper. Saute vegetables with already browned rice. Add 1 tablespoon Knorr's Caldo de Tomate, 2 cups water or chicken broth, 1/2 teaspoon cummin, dash pepper, salt (optional. The Tomate has salt in it. Return to boil, cover, turn heat as low as possible. Simmer 15 minutes on low. Let set 5 minutes and serve. I like to serve with tamales or enchiladas. I also add 1/4 cup thawed in microwave frozen peas and 1/2 cup frozen and thawed yellow corn.

I've made Spanish Rice before but my husband went crazy about this recipe! I used Hunt's Fire Roasted tomatoes and the whole package of seasoning and 2 cups of broth after reading the reviews and will make this again and again!

After making this tonight for the first time I have to concur with some of the above statements. Way too much water and tomatoes and just tasted salty. I will try it again next week with less fluid and used the chicken stock/broth instead. Should make it better.

I have been trying to make spanish rice for years and could never accomplish it. I searched and found this recipe and figured it couldn't come out any worse than I've done in the past...I was amazed when it came out perfect!!! I have made it twice now and will always use this recipe! Now that we have diced tomatoes with chiles and onions already in them, it's even easier!! I would like for it to have color to it but the taste is spot on!!

I also used chicken broth, organic fire roasted diced tomatoes (Muir Glen, organic packaged taco seasoning (used the whole package-'Simply Organic' as some other packaged seasonings have all kinds of mystery ingredients and I am highly sensitive to MSG. I thought it turned out terrific.

I used Del Monte fire roasted diced tomatoes. My company from Mexico loved this smokey spicey spanish rice. It was a hit.
