    This was a very simple and very flavorful quiche. It was a hit at our Easter dinner. We are trying to be more concious eaters and this recipe was a very healthy, flavorful, rich addition to our dinner.

    My whole family loved it. I agree that it's not very quichey, but the flavor was great. And my kids loved it even though it was packed full of veggies. It did take closer to 40 minutes to bake, but it was easy to make and could easily be made ahead of time. Keep the quick healthy meals coming.

    I had high hopes for this recipe but they were dashed. It takes closer to 40 minutes to cook and it isn't 'quichey' or 'custardy'. I ended up with veggies on a pie crust with a layer of cheesy crust over top. My husband wouldn't touch it and I'll probably throw the remainder away.

    Makes a lovely presentation for company for lunch or dinner. Easy to prepare veggie and cheese mixtures in advance, then put together at the last minute. It does take a lot longer than 20 minutes to bake -- closer to 40. Yummy.

    This vegetable pie was very good. The ricotta gives it a nice flavor and texture. Takes longer than 20 minutes to bake,though.
