These cookies were very easy to make, they smelled wonderful while baking and tasted so yummy. This recipe is definitely a keeper.

Didn't have any molasses on hand, so I mixed in extra brown sugar. I'll use molasses next time, since I'm pretty sure it will add more depth of flavor. Did add 1/2 tsp extra ginger and may add more when I make them again. Cookies were sweet, chewie, and irresistible. Don't bother pressing them down--just bake right after rolling in the sugar, and they'll spread out just fine.

Changed the recipe a bit. I used butter other than the shortening and fresh ginger other than the ground. I accidentally doubled the flour and they came out awesome. Preffered the ones with the more flour and have continued to make them that way.

I didn't have molases so I used honey instead.. I also didn't have shortening so I used butter instead.. These are very tasty cookies.. I think that I will skip rolling the balls in the sugar next time as I found them to be extra sweet that way..
I guess that I extra baked them in the oven, they got little dry and crispy but are still yummy..

I have been looking for a soft ginger cookie for a while. This cookie has just the right amount of spice - not too strong. It is very easy to make, I had all the ingredients needed without making a special trip to the store. My 10 year old daughter who doesn't care for ginger cookies loves these. Thanks Paula - you ROCK!

I have to say, I am a terrible baker, and the whole idea of baking just frightens me (I've had enough let downs with the easy bake ovens and home ec. to scar me for life. But I decided to try something for the holidays and found this recipe. I mustered up enough courage to have at it... and WOW! These cookies are so tasty. Just the right amount of spices and softness. It was FAST and EASY! The kitchen smells heavenly too! Perfect holiday treats to give to friends, family, co-workers, etc.

These ginger or molasses cookies are excellent! I made them for a football game and they went fast! Easy to make and quick to bake!
