As I read this recipe, I thought "this will never work." First of all, how does one "finely chop" soft cheese? And how do you make sauteed mushrooms "crispy and tender"? It seems that the writer may have never set foot in a kitchen before! But the dish turned out to be pretty good. In order to make the roulades all look nice, you would have to have a lot of waste, cutting the ends of the rolls off so that they are even. The thicker cut roulades (about 1 inch turned out better then the thinner ones. Also, the sauce recipe makes enough to feed 20 people! I would cut it by at least 1/4.
