    Okay I did nearly everything according to the recipe...I omitted the saltpeter because I couldn't find any and was told that it's not great for you anyway. I just thought that it was weird... I normally love all Alton Brown's stuff, but this one just tasted weird. Sorry. I just can't figure out why so many people liked this. I had the brine going for 10 days and cooked it according to the instructions. I think there were too many sweet ingredients, like cinnamon and cloves that I guess my palate doesn't associate with corned beef. Don't think I'll be making this one again. My wife makes killer beef biscuit in the slow cooker and this doesn't even come half way close to that. But I at least gave it a shot and that's the fun part of cooking...trying new things and that sort of thing. Hope this review will be helpful at least to some people out there.

    Once you brine your own, you may never again buy the "ready-made" stuff. Worth the time! I use the crockpot sometimes for the cooking - puts all the timing off as the recipe reads, but if you are an experienced crockpotter, you know when to add the other ingedients. Making it again today. Happy St. Paddy's Day!

    I loved this recipe, the pepper in the broth is too much cut it back to 1 tsp & the salt in the broth you should omit so only salt the brining juice because when you cook the meat the salt will affect the broth. My husband does not like corned beef and cabbage but since I am part Irish I eat it every year in the spring. He gave this one a 7.5 out of ten which for him was pretty surprising. Please cook for more than 3 hours at 3.5 hours mine was not falling apart but cooked through. I would suggest almost 5 hours for it to be that tender. I also used the packaged corned beef but corned it anyway since I don;t trust that what they sell is actually corned since it never has any real flavor i did it for only 3 days not 10 but it was great

    We just cooked a butcher's brisket Alton's way. It was delicious! But potatoes don't take 30 minutes to cook, so we had mushy potatoes. The other vegetables were perfect.

    Next year I'll do the whole thing - I've never corned a beef, but since Alton says I can, I will!

    I was a little nervous making this as I have never had corned beef and cabbage and wasn't sure if my family would like it. This was wonderful! After having made it for the first time tonight my husband requested we add it to the holiday line up. I had tried a sample of corned beef at Costco and thought I wasn't going to like this one because Costco's was really salty, not the case with AB's!

    This is the best corned beef recipe! I can never find juniper berries, so I just throw in a shot of gin. I also omit the saltpeter - we don't need our corned beef to be bright red. I make a loaf of homemade rye bread to go with this for the best sandwiches, and use the leftovers to make red flannel hash. My husband has been asking me to make this since August - once we get the wood stove going I'll put it together.
