It's fair to say I'm a beginner at really really cooking. I thought the recipe was pretty easy to follow, simple ingredients. It's tastes fresh and probably works best for a summer or spring starter. A grape-fruit spoon works wonderful to scoop out the seeds of the grape tomato. Luckily, I bought an extra package of grape tomatoes as I had a LOT of the chicken salad left over (not complaining.

Unexpectedly DELICIOUS and Simple. I thought these would be time consuming carving out the Tomatoes but nope it's fast and easy. I used left over Roasted chicken and it didn't change the flavor at all. Great for left over chicken. The cinnamon is the key in this recipe, go easy on it but it adds a fantastic flavor to the apple and chicken.

Dear Katie,
You ?followed the recipe to the letter?? The recipe does not call for using a food processor!
I read ?chop [apples] fine?, ?chop cooked chicken fine?, ?stir in mayonnaise and chopped parsley?, to mean ?use sharp knife to chop, and stir gently so it doesn?t all turn to mush?!.
I agree that ?the flavors ? are great, and this is fun to eat.?

This recipe has potential, but is flawed in my opinion. First, I think the chicken and spices could go into the food processor with the mayo. Then, add the shredded (not chopped fine apples. This would make the consistency easier to stuff. Secondly, I followed the recipe to the letter and this made enough of the filling for three times the amount of tomatoes listed.
Aside from this, the flavors in the recipe are great, and this is fun to eat. I will make again with the above changes.

This was just what I was looking for to serve at a home party. Easy, full of flavor. highly recommend
