    This has got to be great, but I did not have all of the items so I improvised. I prefer mine leaner so I used 1 lb venison and 1/3 lb fresh ground pork sausage. I also ran out of apples so I added 1/2 to 3/4 cup unsweetened applesauce, 1 finely chopped medium sweet onion, Tbs mustard, pinch rosemary, about 1/4 tsp Thyme, 2 tsp of Worcestershire sauce, fresh ground pepper and salt. It happen to rain so I could not grill. I formed in small balls and slightly coated with oil in my hand. Shaped into patties and grilled in a hot oiled pan about 3 minutes on both sides. Put on a bun of your choice and top with a good tablespoon or so of salsa con queso. Everyone loved it. I just wish I had some mushrooms to put it over the top. Thanks for the inspiration Chef!

    I've never liked venison, but I found that with this recipe I could eat it no problem. The blue cheese was a bit overwhelming for me (not in a strong way, I just didn`t find that the apples balanced it out as well as they might have. I`m not sure adding more apples would be the key, though. Regardless, I found a way to eat the deer meat I`ve had in my freezer for so long!

    Also, I added an egg to the mixture, just so it would hold better. Not sure if it would have worked without, but they turned out great.

    WOW! The blue cheese on these little burgers Rock!! We didn't add the pork (didn't have any, but our deer had beef fat added during processing. However, I should have chopped the apples a little more finely. But it was splendid! Thanks Robert, this is a receipe that will be repeated!!

    Made a couple of changes (grated one apple, used fontina instead of blue, added one leaf of arugula. They were a huge hit! The pork, apple, mushrooms are the keys to this working so well.

    The apples and bleu cheese balanced perfectly together. They were a sublte enhancement to the venison! The apples and mushrooms kept the burgers moist and flavorful!! Ever my 2 and 5 year olds loved it! Well Done!!
