I've had many Shepherds' Pies in my lifetime, but this one takes the cake. I especially love the mushroom-onion gravy (and I am NOT a fan of gravy. Definitely a winner!

Delicious and has lots of veggies. Definitely a complete one dish meal. Instead of Havarti cheese, I put left over mozzarella and cheddar cheese in mine and it was good. I bet the Havarti cheese makes it really creamy. Yummy! I love Sunny and her recipes!

Any time you mix assorted veggies, meat & seasonings in a casserole to bake, it will turn out pretty well. I thought the instructions for this Shepherd's Pie (or when made with beef, should be called Cottage Pie were very convoluted. It's much easier & quicker to soften the veggies, add meat, thickening agent & liquid all in one pan, place mixture into casserole dish, top with the prepared mashed potatoes, and bake.

This was my first time making a shepherd's pie. It intrigued me since it had zuchini and red peppers instead of the peas. I made it last night for my friends and they absolutely loved it. The flavors were great and the gravy really put it over the top.

I made this tonight for dinner and it was delicious. My husband loved it. The mushroom gravy was very tasty and I will make it again to go over grilled steak. I will be making this one again. Very easy and economical. Great job Sunny!!
