    My fiance and I are getting married in three weeks. On the night we got engaged, after he proposed, he took me to dinner at the Four Seasons, here in Westlake Village. They have a seafood dinner/buffet- sounds cheesy, but, it is amazing! They have everything and one of our favorites was the lobster risotto 'station' (in lieu of the brunch omelette station.... It's been Crazyville around here getting ready for the wedding and I thought we needed a little R & R (Romance and Relaxation. I couldn't sleep last night and watched this episode. This morning I told him I'd be making him something special for dinner and quickly got to cookin' right home from work. I made the salmon carpaccio- adding thinly sliced (on a hand held mandoline jalapeno's and a bit of the leftover chive from risotto recipe... One of our favorite sashimi dishes is thinly sliced salmon with shaved dried garlic, olive oil and jalapenos, so I thought it'd be nice to try as an addition here- no garlic, just jalapeno (and chives. I don't usually like smoked salmon and even I had to admit it was delicious! The apples, I think, mellowed out the 'smokiness' and the peppers with the capers and olive oil were really great! Then for the ever so EASY and delicious risotto... I got the tails from Whole Foods (I know pricey, but, that's the spot for a special meal and they steamed them for me while I finished shopping- time saver! I had to use sherry instead of brandy because I found I didn't have the brandy at home, like I thought. I don't think most would be able to tell the difference...it gave it just a hint of sublime sweetness and richness. This was definitely the best risotto dish I've ever made! We had a wonderful night and are now energized for a big Wii tourney!

    I saw the show where Giada made this and it looked so good. I looked up the recipe and made it. It was very easy to make and tasted like high end restaurant quality food. It impressed my boyfriend big time! (he doesn't like onions but didn't even notice that they were in there, what he doesn't know won't hurt him, right? ; lol This is def on the roster now! Thank you Giada!!! YUMMY!!!!
