    I am trying this recipe today it looks so good! I have been trying to find the pineapple-coconut nectar but had no luck. The only place that does carry it does not have it n stock but reading sum of the reviews has been helpful so wish me luck ;} lol

    I'm from New Orleans where bread pudding is king and this is a great recipe! I left out the rum and subed coco milk for heavy cream...so good. Added pecans and a side of vanilla ice cream! try it!

    I also did not expect to like this as much as I did. I could not find coconut milk or the nectar, so I just used cream of coconut, a whole can, and 1 cup of pineapple juice and it was delicious! Next time I will make a rum sauce to go over it!

    I don't know what else to say, other than 'Wow'. I did not expect to like this dessert as much as I did. It was very tasty and I loved all the fruit in it. I coudn't find the pineapple-coconut nectar, so I just omitted it. I also used a larger can of pineapple than the recipe called for, so the extra juice made up for the missing nectar. We didn't have any dark rum in the house, but we did have spice rum, and I think I'd rather use the spiced rum anyway. It added even more flavor. Excellent! We'll be serving this as an easy dessert at a party in 2 weeks.

    I normally love everything I try from Sandra Lee, but this was just so-so. it turned out really mushy and the flavors weren't all that great. Probably won't make this again anytime soon.

    This is the best bread pudding. I couldn't find the coconut-pineapple nectar but used mango nectar instead. Delicous!! And did I mention it was sooooo easy. Thank you Sandra.

    About draining or not draining the pineapple ? as discussed in some reviews. Although the recipe doesn?t specify which way to go, I?m pretty sure that Sandra Lee used the juice from the pineapple when she made this on her show.

    I had to adjust things a bit from the original recipe. I couldn't find the 7-ounce bag of dried tropical fruit. So, I used a 6 oz. bag of mixed dried fruit (Welch's that included pineapple, cranberries, cherries, apples, and raisins. Also couldn't find the cup of pineapple-coconut nectar. But 1/2 cup of Coco Lopez Cream of Coconut and a 1/2 cup of pineapple juice seemed to be a good substitution.

    For a "topping sauce" I used the rest of the can of Coco Lopez, another 1/2 cup of pineapple juice, and a can of sweetened condensed milk (Eagle Brand. Both the bread pudding and the sauce are better when warm.

    I think this recipe will be my "go-to" for bread pudding from now on! Everyone that tried it liked it a lot. Thanks!

    I did not have any rum so I did not drain the can of pineapple. I could not find coconut milk but used cream of coconut I found in the latin isle. Also, could only find pineapple nectar! Still, it turned out to be a crowd pleaser! I really recommend making this.

    I thought the bread pudding was very good. It makes a huge amount. I would half the recipe if I make it again. I couldn't find the coconut-pineapple nectar so I put in the whole can of pineapple (juice included and added 1/4 cup of orange juice. It turned out fine.
