    This is wonderful and easy. Babaganoush, in it's simplest form. Sometimes I add a little cumin or yogurt, but delicious the way it is.

    This recipe was pretty good, the tahini paste was a little too strong for me so I added a dash of vinegar and a pinch of cumin, turned out pretty good ;

    Lets be fair to Paula. She is the best. Hardly anyone that posted on this post made the recipe. So how can you give it 1 star or 5. Com'on people. I love you Paula and have done your tour and ate at Ladies and Sons mand coming back to do it again in October.

    The pita chips were not baked, though she said you could do so, on the show she actually fried them for a couple of minutes then seasoned them with salt, garlic and a sprinkle of parsley and that was it.

    This is a decent eggplant dip - best served at room temp. For those who watched Paula on tv, she baked two eggplants in the oven at 350 for about an hour - I used one large eggplant and at 350 the eggplant was soft in about 45 min. The dip is substantial - you need a hearty cracker to go with it, otherwise the crackers will break apart when dipped. The pitas were brushed with salt, pepper and I believe cumin, before toasted.

    This Eggplant Dip recipe air on 2/13/09.
    Paula Deen BAKED the eggpalnt in oven.
    Did anyone get the Temp of oven and how
    long did she cook the eggplant?

    I was really looking foward to making this, it sounded so delicious. Sorry Paula, I followed directions to a T and it came out bitter and mushy. Maybe if the eggplants were sliced, salted and allowed to sit so the bitter was falls away from them and then roast them. Also, it needed a bit more lemon then called for. I will give this one more try and then I will officially give up on this one.

    I usually love all of Paula's recipes, but this was almost the worst thing I have ever tasted! I thought it was the garlic, but I am a garlic lover. Maybe there was something wrong with the eggplant I used, bit I will never attempt this recipe again, even though it did sound delicious.
