Every time I make this it turns out perfectly, as i am only 11!! I don't know how to mess this one up or why people have bad things to say about it. Thanks Giada, family/ friends love it, this one's a keeper

You don't miss meat in this recipe. The vegetables are moist and filling, the sauce is creamy and just so delicious you can't stop eating!!!

My vegetarian husband and 10 year old daughter both loved this. I left out the porcini and just added chicken stock and dry sherry in place of the wine. I also added a touch of balsamic vinegar to the sauce to brighten it up a bit. I didn't have marscapone so I used a little cream cheese.
It all turned out fabulous and I will use this one again!

As a veggie lover, I was excited to make this recipe and it turned out to be easy to make (even without a food processor and tasty. As some others mentioned, I did not use the dried porcini mushrooms and substituted chicken broth for the water they were to be soaked in. I didn't miss them, and I will definitely make this again!

I made this dish when I had a group of friends over and they absolutely loved it. I was relieved it was really easy and fast to make and the marscapone helped make it more creamy. DELICIOUS!!

This dish was amazing! I made it exactly as the recipe directed and it was more delicious than I had hoped for. Even my skeptical eaters that are not willing to try new and different things just loved it. I will definitely be making this one again and I will share this recipe with friends.

I made this last night for my fiance, brother and his wife. My brother doesn't eat meat, so I wanted a main dish that was hearty and not just a plain pasta. This definitely was a huge hit! I doubled the recipe so I would have enough for leftovers, and it was just as good the next day. I took advice from other reviewers and left out the porcini mushrooms and mascarpone cheese. I used chicken broth and a few extra mixed mushrooms, and used a little bit of ricotta at the end to add the creamy texture. It was delish and I will definitely make it again!

This was a great spin on bolognese. I usually make it with meat but i used this pasta as a side dish. It was great. The only thing i did was leave out the dried porcini mushrooms, they were expensive, i added button mushrooms and used beef stock. My husband had to move the dish off of the table we just could not stop eating. Definitly going to keep this in mind for entertaining!

It was great and very tasty for a vegetable pasta dish. Like some users, I don't really care for the procini mushroom and think I would make it without next time. Also, substitute Heavy cream for mascaprone.
Love Giada's recipe. Easy and yet, very tasty. Keep up the good work
